Cinnamon sugar mascarpone:
Savoury spread:
Fritters:
1. Cook the pumpkin in salted water until soft. Drain well and mash to a puree.
2. Beat the eggs and add to the pumpkin. Mix well.
3. Sift the flour, baking powder and salt together and add to the pumpkin mixture. Mix well.
4. Heat a little oil in a pan and fry tablespoons of the mixture until golden on the one side. Flip over and fry until golden on the other side.
5. Drain on absorbent paper.
Cinnamon sugar Mascarpone:
Mix sugar and cinnamon together. Add to the mascarpone and mix through.
Savoury spread:
Spread generously with your favourite Cream Cheese and serve with lime wedges and a sprinkle of parsley.
Enjoy as a sweet treat or as a savoury side.
