Smashed Air Fryer Potato Salad

Ingredients

Smashed potatoes:

750 g baby potatoes
olive oil , enough to spray or drizzle over
5 ml salt flakes
250 g LANCEWOOD® Medium Fat Smooth Cheese and Chives Cottage Cheese

Pickled Onions:

2 red onion(s) , sliced
80 ml white grape vinegar
45 ml light brown sugar
60 ml olive oil
A pinch of salt

Method

Smashed potatoes:
Wash and clean the potatoes and add them to a medium sized pot. Add the water and salt. Bring to a boil on high heat until just soft.

With a potato masher or large spoon, smash the potatoes. Spray with oil and sprinkle with salt. 

Place in a single layer in the basket of the air fryer and air fry at 200oC for 10 minutes until golden and crispy. Repeat with the remaining potatoes.

Pickled onions:
Combine all ingredients for the onions and leave to stand for 1 hour, tossing and stirring every now and again.

To serve:
Arrange the potatoes on a platter and dollop the cream cheese on top over. Drain the onions (reserve the sauce as it makes a delicious salad dressing) and scatter the onions on top of the potatoes. 

Top with extra chopped chives and spring onions.
