Prawn Bites with Creamy Dip

Ingredients

300 g red sweet potato(es) , cut into 1 cm slices 
30 ml canola oil

 

Topping:

230 g LANCEWOOD® Medium Fat Spring Onion & Chives Cream Cheese
1 large avocado(s)
1 garlic clove , crushed
10 ml lemon juice
30 ml italian parsley , chopped
salt & freshly ground black pepper  to taste 
24 medium prawns , cooked & cut in half 
60 ml micro herbs
lemon wedge(s)

Method

Oven baking:
Preheat the oven to 180°C. Line a baking sheet with baking paper. 

Place the sweet potato slices on the baking sheet and brush with oil on both sides.

Bake for 15 minutes. Turn over and bake for a further 15 minutes or until golden and crispy. Set aside to cool.

Air fryer baking:
Brush the sweet potato slices with oil on both sides.

Place in the air fryer basket and air-fry for 10 minutes. Turn over and air-fry for a further 5 minutes. Leave to cool.

Topping:
Blend the cream cheese, avocado, garlic, lemon juice and parsley together until smooth. Season to taste.

Assemble:
Arrange the sweet potato slices on a serving platter. Top with the cream cheese mixture and prawn.

Sprinkle micro herbs over and serve with lemon wedges.

HINTS & TIPS:
Air fryer cooking times are a guideline as temperatures may vary. Please adapt cooking time accordingly.
