To finish:
Cook the potatoes in salted boiling water until soft. Drain well.
Add the butter and mash until smooth. Mix in the cheese sauce and half of the cheese. Season to taste.
Spoon into the prepared dish and sprinkle the remaining cheese and the bacon over.
Bake for 20 – 25 minutes until golden and bubbling.
Sprinkle the chives or spring onions over just before serving.
HINTS & TIPS:
Use cauliflower mash instead of potato mash for a banting option.
