Optional extra additions:
can of tuna, peppers, fried mushrooms, salami, spring onions, peppadews or corn.
Preheat oven to 180°C. Spray a muffin pan with nonstick spray.
Cook the macaroni according to the instructions on the packet. Drain and set aside.
In a bowl, beat the cottage cheese, eggs and milk together. Add to the macaroni.
In a separate bowl, mix the breadcrumbs and corn flour together. Add the mixture to the macaroni with 375 ml of the cheese. Mix through.
Add any additional ingredient and spoon into the prepared muffin pan.
Sprinkle the remaining cheese over and bake for 30 minutes or until golden.
Leave to cool slightly in the pan before removing.
Store in the fridge and pop it into your lunchbox.
