Cottage cheese pizza base

Ingredients

250 ml self-raising flour
salt , a pinch
Flour , for dusting
250 g LANCEWOOD® Lactose Free Low Fat Plain Smooth Cottage Cheese
125 ml tomato purée
1 garlic clove , crushed
5 ml mixed herbs
5 ml sweetener
salt & freshly ground black pepper , to taste
250 ml LANCEWOOD® Medium Fat Mozzarella , grated

 

Optional Toppings:

mushrooms
yellow, red or green peppers
ham
spinach
feta
tomato(es)
basil
chicken
peppadews

Method

In a bowl, combine the self-raising flour, salt and cottage cheese. Mix until a dough ball starts to form. Knead to a soft smooth dough. Cover and leave to stand for 30 minutes.

Preheat the oven to 225oC. Roll the dough out on a lightly floured surface into a shape that will fit your pizza pan. If your pan is small (less than 20cm in diameter), divide the dough in 2 and roll out separately. Use a rolling pin to transfer the pizza to the pizza pan(s).

Bake for 5 minutes and then remove from the oven. 

In a bowl, mix tomato puree, garlic, mixed herbs, sweetener and seasoning together. Spoon onto the pizza base(s) and spread out evenly.

Sprinkle the cheese over and top with your favorite ingredients. Bake for another 6-8 minutes until crispy on the edges and golden brown.

Cut into slices and serve immediately.
