Cottage Cheese Brownies

Ingredients

Brownie layer:

500 g LANCEWOOD® Creamed Smooth Cottage Cheese
1 extra large egg(s)
1 extra large egg yolk(s)
160 ml cocoa powder
160 ml soft brown sugar
125 ml chocolate chips
2 ml coffee granules
A pinch of salt

Cream layer:

250 g LANCEWOOD® Creamed Smooth Cottage Cheese
60 ml butter , softened
125 ml icing sugar

To finish:

40 g chocolate shavings
candy canes

Method

Brownie layer:
Preheat the oven to 180oC. Line a 18 x 27 x 3,5 cm deep pan with baking paper. Create an overhang with the baking paper on all sides to allow for easy removal from pan.

In a bowl, beat the cottage cheese, egg and egg yolk together. Add the cocoa powder and brown sugar and mix in. Fold in the chocolate chips and the coffee granules. Mix until well combined and spoon into the prepared pan.

Bake for 20 minutes and then remove from the oven and leave to cool completely. 

Cream layer: 
In a bowl, beat the cottage cheese and butter together until smooth. Add the icing sugar and mix in. 

Spoon on top of the brownie layer and spread out evenly. Refrigerate until firm. Sprinkle chocolate shavings over and cut into blocks.
