Create NowPlace the sweet potatoes in a pan with a lid. Season with salt and pour enough water over to cook. Cook until just soft.
Once soft, drain off any excess water and return to the heat. Add the butter, honey, lime juice, chili and paprika. Stir over medium heat until glazed and golden and then remove from the heat.
Spread the dip onto a platter. Spoon the sweet potatoes on top and sprinkle with spring onions and coriander.
