Chilli and Lime Sweet Potatoes

Ingredients

2 large sweet potatoes , washed, peeled and cubed
salt  to taste
60 ml butter
60 ml honey
juice of 1 lime
1 red chilli , chopped 
2.5 ml paprika
175 g LANCEWOOD Chilli & Lime DIPde'liteâ„¢
1 spring onion(s) , finely chopped
30 ml freshly chopped coriander

Method

Place the sweet potatoes in a pan with a lid. Season with salt and pour enough water over to cook. Cook until just soft.

Once soft, drain off any excess water and return to the heat. Add the butter, honey, lime juice, chili and paprika. Stir over medium heat until glazed and golden and then remove from the heat.

Spread the dip onto a platter. Spoon the sweet potatoes on top and sprinkle with spring onions and coriander.
